Vietnamese Crepes with Nuoc Cham Dipping Sauce

I’ve never been to Vietnam, but one of my very best friends lives and teaches in HCMC and whenever we get the chance to catch up, she fills me in on her experiences there. I based this recipe on our latest conversation and with a few of her tips, I tried to recreate what I'm sure is some of the best street food eating ever. I can’t wait to travel there someday! From what she tells me, it’s definitely a country to fall in love with and the people she's met have been grateful, welcoming and kind.

Last of the Season "Grilled" Spot Prawns with Garlic Scape, Cilantro and Lime Aioli

Spot prawns are bigger than the largest jumbo shrimp. Their shell are a beautiful pinkish-red. Some fish markets sell the prawns with their heads on; however, my fish monger takes the heads off right before selling them. Spot prawns have a buttery, sweet flavor, almost like East Coast lobster, and a lovely firm texture. They are not inexpensive, but at this time of year I can't resist splurging at least a couple of times during the course of prawn season.

Peruvian Ceviche

We make this all the time, especially in spring and summer, for a refreshing lunch or dinner. Peruvians serve this dish with corn-on-the-cob and boiled, sliced sweet potatoes, with a little of the juice poured over them--truly delicious! The sauce is called 'leche de tigre' (tiger's milk) in Spanish, because of the heat (rocoto peppers are VERY hot and spicy), and said to be an Aphrodisiac! The fish may seem raw when you read the recipe--be assured, it is not. The lime juice pickles the fish, turning it from clear to white, just as if it were heated, but keeps the light, fresh flavor of whatever fish (and/or shrimp) you use. Even friends and family who avoid any kind of sushi will approve of the fine flavor!
