Ingredients

  • 3 tablespoons vegan butter-style sticks, such as earth balance
  • 2 tablespoons all-purpose flour
  • 1-1/2 cups unsweetened refrigerated soy milk
  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • dash ground nutmeg
  • hot cooked pasta

Directions

  1. In a small saucepan, melt vegan butter over medium heat. Stir in flour until smooth; gradually whisk in soy milk. Bring to a boil, stirring constantly. Remove from heat; stir in nutritional yeast, salt, pepper and nutmeg until smooth. Let rest 3 minutes or until thickened. Serve with pasta.
