Ingredients
- 1/2 cup oats
- salt and pepper, to taste
- 1 egg
- 1 tablespoon ghee
- handful of loosely packed greens (like kale or baby spinach)
- 1 pinch garlic powder
- 1/4 cup kimchi
- 1/2 avocado, sliced
- hot sauce (optional)
Directions
- Combine the 1/2 cup oats cooked with 3/4 cup purified water over the stovetop. Bring to a boil, then stir until the oats are softened. Add a pinch of salt and mix it all up.
- Meanwhile, add 1 tablespoon ghee to a skillet and melt. Crack an egg into the ghee and fry until the edges are crispy, about 4 minutes. Remove the egg from the pan and add the greens. Sauté with salt, black pepper, and garlic powder until just wilted.
- Add oats to a bowl. Top with sautéed greens, kimchi, fried egg, and avocado slices. Add a few dashes of hot sauce, if using.
