Savory Stovetop Oats with Avocado, Greens, and Kimchi offer a nourishing twist on breakfast. Creamy oats are topped with vibrant greens, creamy avocado, and tangy kimchi for a bold, umami-packed meal that’s satisfying and gut-friendly.

Ingredients

  • 1/2 cup oats
  • salt and pepper, to taste
  • 1 egg
  • 1 tablespoon ghee
  • handful of loosely packed greens (like kale or baby spinach)
  • 1 pinch garlic powder
  • 1/4 cup kimchi
  • 1/2 avocado, sliced
  • hot sauce (optional)

Directions

  1. Combine the 1/2 cup oats cooked with 3/4 cup purified water over the stovetop. Bring to a boil, then stir until the oats are softened. Add a pinch of salt and mix it all up.
  2. Meanwhile, add 1 tablespoon ghee to a skillet and melt. Crack an egg into the ghee and fry until the edges are crispy, about 4 minutes. Remove the egg from the pan and add the greens. Sauté with salt, black pepper, and garlic powder until just wilted.
