This foolproof weeknight dinner is naturally gluten free, and is on your table in no time! It is easily adaptable and can be made using seasonal fruits or veggies.
Ingredients
- 2 large sweet potatoes, peeled and cut into 1/2-inch cubes
- 1 large sweet onion, cut into wedges
- 2 tablespoons olive oil
- 1 tablespoon brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon ground allspice
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon pepper
- 3 small pears, quartered
- 1 package (19 ounces) italian sausage links
Directions
- Preheat oven to 425º. Place sweet potatoes and onion in a 15x10x1-in. baking pan; drizzle with oil. Sprinkle with brown sugar and seasonings; toss to coat. Bake for 15 minutes.
- Gently stir in pears; top with sausages. Bake 20 minutes longer, stirring once. Increase oven temperature to 450º. Bake for 8-10 minutes or until sausages are golden brown and a thermometer inserted into sausage reads at least 160º, turning once.
