Salsa Shakshuka with Avocados

post-title

I was watching a cooking show and the host put several ingredients into a pan for her shakshuka. I realized those ingredients were essentially the makings for salsa, so that's how I ended up with this fresh morning meal.

Ingredients

  • 1 jar (24 ounces) salsa
  • 6 large eggs
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 6 whole pita breads
  • 1 medium ripe avocado, peeled and sliced
  • optional: cotija cheese, sliced radishes and fresh cilantro leaves

Directions

  1. Spread salsa into a large cast-iron or other heavy skillet; place on grill rack. Grill, covered, over medium heat until bubbly, 13-15 minutes, stirring occasionally.
  2. With back of spoon, make 6 wells in salsa; break an egg into each well. Sprinkle with salt and pepper. Grill, covered, until egg whites are completely set and yolks begin to thicken but are not hard, 6-8 minutes. Serve with pita bread, avocado and toppings of your choice.
