Mexican Street Corn Salad

Traditional Mexican street corn is turned into the best Mexican Street Corn Salad ever! Lime, Mexican cheese with avocado, red onions and crema mexicana.

Ingredients

  • 6 ears corn , grilled
  • 1 avocado , cubed
  • 1 cup queso cotija or queso fresco
  • 1/2 cup red onion , chopped
  • 1/3 cup crema mexicana
  • 1/3 cup cilantro coarsely chopped, plus more for garnishing
  • 2 tablespoons fresh lime juice
  • 1 teaspoon coarse kosher salt
  • 1/2 teaspoon chile powder
  • hot sauce optional

Directions

  1. Cut the corn off cob and place in a large mixing bowl.
  2. Add the avocado, cheese, onion, crema, cilantro, lime juice, salt and chile powder. Toss well, be sure to not stir.
  3. Refrigerate until ready to serve. Toss before serving and then garnish with additional cilantro and hot sauce of choice.
