Ingredients
- 2 tablespoons olive oil
- 2 celery ribs, chopped
- 1 medium carrot, chopped
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon dried oregano
- 3 cups shredded cooked chicken
- 3 cups chopped fresh spinach
- chopped fresh parsley
Directions
- In a large saucepan, heat oil over medium heat. Add celery, carrot and onion; cook and stir until crisp-tender, 5-7 minutes. Add garlic; cook 1 minute longer.
- Stir in broth, thyme, salt, pepper and oregano. Bring to a boil. Reduce heat; cover and simmer until vegetables are tender, 8-10 minutes. Stir in spinach and chicken. Cook and stir until heated through and spinach is wilted, 2-4 minutes. Sprinkle with parsley.
