Ingredients

  • 2 tablespoons olive oil
  • 2 celery ribs, chopped
  • 1 medium carrot, chopped
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon dried oregano
  • 3 cups shredded cooked chicken
  • 3 cups chopped fresh spinach
  • chopped fresh parsley

Directions

  1. In a large saucepan, heat oil over medium heat. Add celery, carrot and onion; cook and stir until crisp-tender, 5-7 minutes. Add garlic; cook 1 minute longer.
  2. Stir in broth, thyme, salt, pepper and oregano. Bring to a boil. Reduce heat; cover and simmer until vegetables are tender, 8-10 minutes. Stir in spinach and chicken. Cook and stir until heated through and spinach is wilted, 2-4 minutes. Sprinkle with parsley.
