Corned beef hash is a delightful combination of crispy-edged potatoes, tender onions and salty spiced beef. Serve it with eggs for breakfast or brunch, or pair it with a side salad for lunch or dinner.
Ingredients
- 2 cups finely chopped peeled potatoes
- 2 tablespoons butter
- 1/2 cup chopped onion
- 1 garlic clove, minced
- 2 cups finely chopped cooked corned beef
- 2 tablespoons canola oil
- 1/4 teaspoon onion powder
- 1/4 teaspoon coarsely ground pepper
- minced fresh parsley, optional
Directions
- Place potatoes in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 8-10 minutes or until just tender. Drain and set aside.
- In a large skillet, heat butter over medium heat. Add potatoes; cook and stir until edges begin to brown. Add onions; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer.
- Stir in corned beef, oil, onion powder and pepper. Reduce heat; cook and stir until heated through, 8-10 minutes. If desired, garnish with parsley.
