These carrot fritters are absolutely delightful with crisp edges and a yummy gochujang honey sauce for dipping.
Ingredients
- 3 cups grated carrot
- 2 large eggs, lightly beaten
- 1/4 cup grated onion
- 1/4 cup milk
- 3/4 cup all purpose flour
- 3/4 teaspoon salt
- 1 teaspoon baking powder
- vegetable oil for frying as needed
- chopped fresh chives or cilantro
- gochujang-honey dipping sauce
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons gochujang, or to taste
- 2 teaspoons honey
- 1 pinch salt
- 1 pinch ground black pepper
Directions
- Gather all ingredients.
- Stir together carrot, eggs, onion, and milk in a bowl.
- Mix together flour, salt, and baking powder in a large bowl; Stir in carrot mixture.
- Heat 1/4-inch vegetable oil in a large skillet over medium-high heat. Drop batter by 2 tablespoon portions into hot oil, flattening them slightly to make 1/2-inch thick patties.
- Cook until golden brown and centers are cooked through, about 2 minutes. Flip and cook on the other side.
- Drain on paper towels and hold in a warm oven while preparing remaining fritters.
- For Gochijang-Honey Dipping Sauce: Whisk together mayonnaise, sour cream, gochujang, honey, salt and pepper in a small bowl.
- Serve with Gochijang-Honey Dipping Sauce. Sprinkle with chives or cilantro.
