Carrot Fritters

These carrot fritters are absolutely delightful with crisp edges and a yummy gochujang honey sauce for dipping.

Ingredients

  • 3 cups grated carrot
  • 2 large eggs, lightly beaten
  • 1/4 cup grated onion
  • 1/4 cup milk
  • 3/4 cup all purpose flour
  • 3/4 teaspoon salt
  • 1 teaspoon baking powder
  • vegetable oil for frying as needed
  • chopped fresh chives or cilantro
  • gochujang-honey dipping sauce
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons gochujang, or to taste
  • 2 teaspoons honey
  • 1 pinch salt
  • 1 pinch ground black pepper

Directions

  1. Gather all ingredients.
  2. Stir together carrot, eggs, onion, and milk in a bowl.
  3. Mix together flour, salt, and baking powder in a large bowl; Stir in carrot mixture.
  4. Heat 1/4-inch vegetable oil in a large skillet over medium-high heat. Drop batter by 2 tablespoon portions into hot oil, flattening them slightly to make 1/2-inch thick patties.
  5. Cook until golden brown and centers are cooked through, about 2 minutes. Flip and cook on the other side.
  6. Drain on paper towels and hold in a warm oven while preparing remaining fritters.
  7. For Gochijang-Honey Dipping Sauce: Whisk together mayonnaise, sour cream, gochujang, honey, salt and pepper in a small bowl.
  8. Serve with Gochijang-Honey Dipping Sauce. Sprinkle with chives or cilantro.
