Apple Cranberry Grains

I made some changes to my diet in order to lose weight. My kids are skeptical when it comes to healthy food, but they adore these wholesome grains.

Ingredients

  • 2 medium apples, peeled and chopped
  • 1 cup sugar
  • 1 cup fresh cranberries
  • 1/2 cup wheat berries
  • 1/2 cup quinoa, rinsed
  • 1/2 cup oat bran
  • 1/2 cup medium pearl barley
  • 1/2 cup chopped walnuts
  • 1/2 cup packed brown sugar
  • 1-1/2 to 2 teaspoons ground cinnamon
  • 6 cups water
  • optional toppings: milk, sliced apples, dried cranberries and chopped walnuts

Directions

  1. In a 4- or 5-qt. slow cooker, combine the first 11 ingredients. Cook, covered, on low until grains are tender, 4-5 hours. Serve with toppings as desired.
