Crisp-tender air fryer asparagus tossed in a zesty red wine Dijon vinaigrette—simple, healthy, and full of flavor.
Ingredients
- 2 tablespoons red wine vinegar
- 2 tablespoons extra virgin olive oil
- ¼ teaspoon kosher salt
- ⅛ teaspoon crushed black pepper
- 1 tablespoon dijon mustard
- 2 tablespoons parsley, finely chopped
- 2 garlic cloves, finely minced
- 1 pound asparagus, (1 bunch), tough ends trimmed
Directions
- Whisk together all ingredients except the asparagus in a small bowl. Coat the asparagus evenly by drizzling the dressing over it and using your hands to distribute it thoroughly.
- Let it marinate until ready to air fry, at least 10 minutes or up to a few hours.
- In batches, as needed air fry the asparagus at 400F in a single layer for 5 minutes, remove and shake the basket then continue air frying for another 3 to 5 minutes, depending on the thickness.
